I love getting family recipes! I’m not Irish, but I have been making this recipe from someone’s Irish Grandmother for years! It’s not too sweet. I highly recommend baking this bread in Pampered Chef Stoneware!
Irish Soda Bread
3 cups flour
1 cup sugar
1 tsp baking soda
3 tsp baking powder
pinch of salt
4 ounces Butter (Kerrygold)
1 egg
1 cup raisins
1 cup Buttermilk
Preheat oven to 350. Grease well and flour a 2 quart round casserole. (I use the Glazed Round Baker ,of course)
In a large bowl, mix first 5 ingredients. With Pastry Blender cut in the margarine till mixture resembles course crumbs.
Stir in the Raisins
In a medium bowl with fork, beat egg slightly; remove 1 TBS and reserve.
Stir buttermilk into remaining egg and then stir into flour mixture just until flour in moistened. (dough will be sticky)
Sprinkle some flour over the top of mixture and knead 10 or 12 strokes in the bowl. Turn the mixture into baking bowl and sprinkle and little more flour over top so you can fit to the shape of the bowl.
Cut a 4" cross on the top about 1/4" deep with a sharp knife.
Using pastry brush, brush dough with reserved egg.
Bake about 50 to 60 minutes or until a cake tester comes out clean. Cool in Baking Bowl on wire rack for 10 min; remove from bowl and cool completely.
